Libreta, boli… y ¡listo!


2-3 berenjenas (unos 400 gr una vez asadas), 120 gramos de tofu, salsa teriyaki, 1 diente de ajo, aceite de oliva (picante o natural), sal.

¿Cómo se elabora?

Debes cortar el tofu en dados y riégalo con salsa teriyaki, úntalo bien y déjalo marinar en el frigorífico durante un par de horas. Asa las berenjenas en el horno a 180ºC hasta que estén tiernas. Este proceso durará sobre unos 30-40 minutos aproximadamente, pero el tiempo dependerá de su tamaño.

Cuando estén listas, déjalas enfriar y después pélalas. Dispón las berenjenas troceadas en el vaso de la batidora o Thermomix, luego añade tofu, el diente de ajo pelado y retirando el germen, sal y aceite de oliva al gusto.

Tritura hasta obtener una crema suave.

Una vez hecho el paté de berenjena con tofu, ponlo en un cuenco tapado y déjalo reposar en el frigorífico para que adquieras más consistencia y disfrútalo bien fresco.

Con tostadas o palitos, quedará riquísimo.
